Silver carp is a large fish, rarely can you find specimens of less than a kilogram weight. And there are a lot of caviar in such a large catch. How to cook it, if the usual salting is already fed up? The answer is simple: there are many dishes from silver carp roasted on oil. Two of them we offer to your attention.
Fried caviar in sesame breading
If you are going to fry a freshly caught silver carp, and when cutting you got caviar, do not hurry to put it aside! Instead, it can turn into an unusual main dish. And only a few additional ingredients will turn it!
- Silver Carp Caviar – 200 grams,
- wheat flour – 2 tablespoons,
- salt – pinch,
- ground black pepper or pepper mixture – ½ tsp,
- sesame – 1 tablespoon,
- vegetable oil for roasting.
Silver Carp Caviar washed in a colander under cold water. We do not remove films from it, just remove the extra ones. Caviar should remain a solid piece to keep its shape when frying. We put caviar bags on a towel so that excess moisture is absorbed, and at this time we will deal with breading.
Pour flour in a flat saucer, add white sesame or a mixture of white and black to it. Top with a mixture of peppers or ground black pepper and mix thoroughly. Put the pan on a medium heat and pour oil into it. While the oil is heated, take a bag of caviar, put it in breading. While one side collapses, sprinkle the still clean side of the bag with salt, then turn over and pan the second side. Roll the caviar in hot oil and fry until sure golden brown. We spread the prepared fried caviar of silver carp on paper towels to make excess oil on the glass, and then serve to the table, garnish with fresh dill and parsley and slices of tomato or lemon.
Not all dishes from silver carp caviar will require a large number of fish for cooking. Even the caviar from one medium-sized carcass can be turned into a sumptuous breakfast or snack. It’s about fried caviar pancakes. For them we need:
- carp caviar – 100 grams,
- egg – 1 piece,
- sour cream – 2 tablespoons,
- flour – 2 tablespoons,
- green onions – 2-3 stalks,
- dill – a couple of stems,
- salt, black pepper – to taste,
- vegetable oil – 2-3 tablespoons.
But for this variant of fried carp caviar you have to roll up your sleeves and take up the laborious task – carefully cut the bags, put the eggs out of them into a container and clean it from films and blood clots. Then the eggs can be lightly whipped with a fork and salt so that they spread out. We pour in sour cream to caviar, we drive in an egg, gently mix it with a fork. Add flour – it needs a little, literally a spoon or two, because the dough must remain liquid, resemble sour cream in its texture. Add to the caviar chopped green onions and dill, align the taste with salt and pepper.
Put the pan on the fire, pour the vegetable oil. If you want to make a dietary version of the dish, you can fry the caviar in a dry frying pan – pancakes will be tasty and without butter. Spoon the caviar dough into the pan, fry until it grabs and turns red, gently turn the spatula over and fry it on the second side. By the way, for breakfast, lazy caviar of silver carp can be fried not with individual pancakes, but with whole cake, just pouring the dough into the pan.
