Light Salad Recipes

Recipes for salads without mayonnaise are suitable for supporters of healthy eating and those who prefer to eat tasty and healthy, who diets or just do not like mayonnaise. Instead, they can be refilled with vegetable, olive, mustard or corn oil, as well as balsamic vinegar, soy sauce, sour cream, yogurt and a variety of white sauces.

I decided to make another unique selection of recipes: five light salads without mayonnaise. The preparation is very simple, the products are very ordinary, and the salads are not only incredibly tasty and healthy, but also very beautiful. With them you can diversify your daily menu or decorate a festive table.

Salad with chicken and pomegranate

  • two boiled chicken legs;
  • one ripe pomegranate;
  • one tablespoon of lemon juice;
  • one bunch of parsley;
  • two medium sized onions;
  • salt and black pepper – to taste;
  • refined sunflower oil – for frying.

Salad with chicken and pomegranate: a step by step cooking process

  1. With chicken legs (cooked until ready) remove the skin and separate the meat from the bones.
  2. Cut the meat or tear it into small pieces.
  3. Two small onion heads are peeled, and then cut into thin half-rings.
  4. Pour a small amount of vegetable oil into the pan, spread the onion and fry it to a beautiful golden color.
  5. Roasted onions shift on a plate and leave to cool.
  6. Tasty ripe pomegranate is cleaned and taken out of it all grains, we shift them into a small dish.
  7. We wash a small bunch of green parsley, dry it and finely chop it with a knife.
  8. Put chicken in a deep bowl, add pomegranate seeds, chopped parsley.
  9. We also send the cooled onion along with the oil, we dress the salad with lemon juice.
  10. Salt and pepper to taste, mix. We give him a few hours to insist (but you can not do this) – and served on the table.

Salad with crab sticks and mushrooms

  • 200 grams of fresh champignons;
  • 200 grams of crab sticks;
  • one medium carrot;
  • one head of onions;
  • one can of corn;
  • salt and black pepper – to taste;
  • refined sunflower oil – for frying.

Salad with crab sticks and mushrooms: a step by step cooking process

  1. The washed and dried fresh mushrooms are cut into thin plates.
  2. Pour vegetable oil into a frying pan, heat it well, spread the mushrooms.
  3. Fry mushrooms on low heat until liquid evaporates.
  4. While the mushrooms are roasting, we remove one small head of onions from the husk and cut them into thin quarter rings.
  5. One medium carrot washed, cleaned and rubbed on a coarse grater.
  6. After all the liquid from the mushrooms has evaporated, pour vegetable oil into the pan and lay out the chopped onion. Stew it for two minutes.
  7. Then we send the carrots into the pan, mix everything and simmer until the carrots are ready.
  8. In the end, add salt and pepper to taste, mix and remove from heat. Leave to cool.
  9. Crab sticks cut into half rings.
  10. We send cold fried mushrooms and vegetables to the salad bowl, add crab sticks, pour canned sweet corn from a can.
  11. All stir, serve on a dish decorated with greens.
  • two sweet bell peppers;
  • three ripe tomatoes;
  • 5 fresh cucumbers of small size;
  • half red onion salad;
  • 100-150 grams of feta cheese or feta cheese;
  • 10-15 pieces of pitted olives;
  • one tablespoon of lemon juice or wine vinegar;
  • 1-2 cloves of garlic;
  • one teaspoon of salt;
  • half a teaspoon of oregano (oregano) or marjoram;
  • 4 tablespoons of olive oil;
  • half a teaspoon of black ground pepper.

"Greek Salad": a step by step cooking process

  1. We wash the cucumbers, cut off the tails and cut them into large semi-circles.
  2. Washed tomatoes cut in half, cut out the core. Each half cut into about five slices.
  3. We clean the large sweet Bulgarian pepper from the seeds and cut into large pieces. To make the salad brighter and more beautiful, take a pepper of a different color.
  4. Prepared vegetables are sent to a deep bowl and mix.
  5. Then we shift the vegetables in the dish, in which we will serve the salad on the table.
