About such a snack as pickled carp at home I knew for a long time, but somehow I was slow to try to cook it in practice. If a fresh silver carp appeared in the house, then, as a rule, it was fried in flour in a frying pan or stewed with carrots and onions. Just recently, I bought a big silver carp and immediately remembered that I had long wanted to pickle it.
Fortunately, in my old cookbook, I quickly found a recipe of pickled silver carp with onions and vinegar, which I wrote down at home, shared with me by a good friend. Immediately I remembered the sharp and spicy taste of pickled silver carp, which she then treated me. The taste of fish was not worse than salted herring.
It is no secret that silver carp is exactly the same as catfish – river fish with a specific meat taste. The meat of these fish smells like mud and mule. Unlike fried fish, pickled fish, thanks to spicy marinade, prepared with the addition of vinegar, spices and onions, does not smell of mud.
Now let’s go to the recipe and see how it is prepared pickled silver carp step by step with a photo.
- Silver Carp – 1 bird,
- Salt – 3 tbsp. spoons
- Sugar – 1 tbsp. spoon,
- Table vinegar 9% – 2 tbsp. spoons
- Spices: spices to fish, black pepper peas, coriander, bay leaf,
- Water – 500 ml.,
- Onions – 1 pc.,
- Sunflower oil refined – 2 tbsp. spoons.

Cook the marinade. To do this, pour water into the pot. Pour in table 9% vinegar.
Behind him, add sugar and salt. The amount of sugar and salt at the end of the preparation of the marinade can be adjusted to your liking.
It remains to refine the marinade with spices. Pour coriander and bell pepper.
Put a bay leaf.
Sprinkle spices to the fish.
Let the marinade boil. After boiling, boil it for another 2-3 minutes. Try the taste. It should get quite salty and sour. Remove from heat and allow to cool.
Peel and cut the quarters into rings or onion half rings.
While the marinade will cool, prepare the silver carp for pickling. Clean the fish from the husk. Cut off the head. By the way, do not even think about throwing it away, because from it, together with the tail, you can cook an excellent homemade fish soup. I already have a recipe for such soup, it remains only to publish it. Spread the belly. Get the insides. Cut the tail. Rinse the obtained carcass of silver carp fish under running water.
It remains to cut the fish into small pieces. To get them, to start a silver carp should be cut into steaks (slices) with a thickness of 2-3 cm.
Next, cut each steak along the ridge into two parts. The ridge can be left in the fish or carefully cut it with a knife, this is optional. But the skin from the pieces of fish do not need to be removed. Put prepared carp slices in a bowl.
As soon as the marinade has cooled and becomes at room temperature, it can be used to pickle carp. For marinating silver carp it is very convenient to use plastic containers with a lid. Put in a container pieces of carp.
Sprinkle the fish with onions on top.
Be sure to put a bay leaf from the marinade in the fish tray. During marinating, it will become an additional carp flavor. Pieces of fish should be completely covered with marinade. Pour marinade on top with sunflower oil. Cover the tray with the silver carp lid. Put it in the fridge for 5 hours. In some recipes of pickled silver carp, which I found on the Internet, it is stated that 2 hours will be enough for salting fish.
In fact, even small pieces of fish in such a short period of time will not have time to marinate properly. The upper part of the pieces of fish can be salty, while in the middle of the fish can be completely tasteless and raw. Therefore, I strongly recommend holding the fish in the marinade for at least five hours.
For me personally, pickled silver carp at home with vinegar and onion is much tastier on the second day. I also want to draw attention to the fact that pieces of silver carp on the edges in the finished form will change the color to white. Fish meat will be like boiled. This is normal. The fact is that under the influence of onions and vinegar and salt, the structure of fish fibers, or more precisely, the protein is broken, as a result of which the meat turns white, like boiled.
How best to serve pickled silver carp. For the holiday table pieces of silver carp can be laid out in the center of the plate, decorated with salad leaves, dill and parsley. Beautifully laid out on the edge of a plate of olives, lemon slices or cherry tomatoes. On top of the fish, you can put the onion from the marinade or chop a ring of fresh onions.

Among the recipes of pickled silver carp home-style, the recipe of pickled silver carp in a jar in oil with carrots deserves attention. To salting fish in this way, you also need a simple list of products.
- Silver Carp – 1 bird,

- Juice of one lemon,
- Water – 1 glass,
- Sunflower oil – 150 ml.,
- Salt – 1 tbsp. spoon with a slide,
- Sugar – 1 tbsp. spoon,
- Bay leaf – 1-2 pcs.,
- Black peppercorns – 4-6 pcs.
Pickled carp in a jar of carrots – a recipe
Preparation of silver carp for this recipe begins with the preparation of fish fillets. Have gutted carp cut the tail and head. Cut off the fins. Put the fish on the back. Press it in the area of the ridge, trying to turn its sides to the surface of the table with your hands. This way you will have an open fish. Make an incision near the ridge, where the fish’s tail is. Carefully reach the ridge.
Remove rib and other large fish bones with tweezers. Fish cut lengthwise into two parts. Next, cut across the stripes with a thickness of 2-3 cm. Fold the pieces of silver carp into a bowl. Cook the marinade. Pour cold boiled water in a bowl. Add lemon juice, black peppercorns, salt, sunflower oil, and sugar. Marinade mix.
Peel carrots and onions. Grate carrots for Korean carrots, cut onions into half rings. Onions with carrots mix.
Prepare a two-liter jar. At the bottom of the banks lay the pieces of carp. Sprinkle the fish with onions and carrots. Put a bay leaf. Lay the fish layer again. So alternate layers until the fish is over. A jar of fish and vegetable cut pour the marinade. Cover with a lid. Silver carp marinated from butter with lemon juice, onions and carrots put in the refrigerator.
Pickled carp in a jar of carrots and onions in oil will be ready in 12 hours. No less tasty is obtained and pickled herring at home.
