Lean, simple ingredients, but very interesting and flavorful cookies with coconut chips in the dough! The filling can be varied to taste, using a favorite, thick, homemade jam, jam or jam! Thanks for the recipe idea Lesia Medunya!
Ingredients for “Lenten Coconut Cookies with Jam”:
- Wheat flour / Flour – 400 g
- Coconut chips – 90 g
- Baking powder dough – 2 tsp.
- Vegetable oil – 100 ml
- Water (lukewarm) – 110 ml
- Salt – 1 pinch.
- Sugar – 150 g
- Vanilla sugar –
Recipe Lenten coconut cookies with jam:
Mix flour, baking powder and coconut chips.
Pour in vegetable oil and mix thoroughly.
In a separate bowl, dissolve in lukewarm water, sugar, salt and vanilla sugar. Mix well.
Pour in the flour mixture.
Knead dough, soft, not sticky to hands.
Divide the dough into 2 parts, wrap in cling film and put into the cold for 30 minutes.
Roll out one piece of dough on a sheet of parchment (layer thickness 0,
Spread thick jam, jam or, as in my case, thick apple jam with slices on top of the surface.
Grate the second part of the dough on top, spreading it over the entire surface.
Send to bake in an oven heated to 180 degrees for 20-25 minutes (be guided by the golden color of the edges and top).
Remove the finished cookies from the oven and cut them into hot squares / rectangles. Let the cookies cool and serve with tea!
