One of our favorite holiday dishes is baked goose. This dish is very tasty, and quite original, and noble. The goose on the table symbolizes prosperity in the family and comfort in the house. This marinade is well suited if we have about 5-6 hours to pickle a goose. The following ingredients will be needed:
• vegetable oil – 4 tbsp. l .;
• 1 large lemon;
• spices to taste;
Pour the mayonnaise with oil into a suitable container. Squeeze there lemon juice. Whisk whisk. Add spices with salt. Stir well. We coat the goose and leave it for 5-6 hours.
In recent years, the method of baking products using a pastry sleeve has become widespread. Meat is cooked very quickly, and it turns out very juicy and tender. The method is very convenient and does not require cleaning dishes and oven from fat. To prepare the goose in the sleeve, you can use almost any kind of marinade. If you need to cook everything during the day, and in the family they love spicy food, a recipe with ketchup will be very appropriate.
Marinade with ketchup
This recipe has a distinctive feature – the goose will be cooked in tomato sauce, and the meat will be very fragrant with a spicy taste. Ingredients:
Ketchup and vegetable oil should be mixed, gradually add lemon juice, then spices and seasonings. Still mixed, and you can rub the goose with this marinade. To make the meat better soaked, you need to wrap it in plastic and put it in a cool place for 5 or 6 hours. Then proceed to roasting.
• spicy ketchup (barbecue type) – 200 g;
• vegetable oil – 4 tbsp. l .;
• black and white pepper;
Mix ketchup with oil, squeeze out lemon juice. Mixing, add spices with seasonings. Carefully all interfere. Rub the goose composition. Wrap in a film and remove for 5-6 hours in the cold. Then bake.
Everywhere has its own national marinade recipes from local products. For Russia, this product has always been honey. Therefore, on the basis of honey they made marinades for cooking poultry.
Spicy marinade with honey
For the preparation of spicy honey marinade take the following ingredients:
• liquid honey – 2 glasses;
• Mustard (Dijon type) – 3 tbsp. l .;
• ginger root – a piece of 3 cm;
Mix honey with mustard. Add a glass of water. Stir. Add the grated ginger, then spices. Again, stir. The resulting composition we coat goose from all sides. Wrap in a film, remove the cold for 3 hours. Then bake.
The above recipes are good for marinating a goose that will be baked whole. But you can cook the bird and individual pieces. It will get faster and easier. Adherents of healthy eating marinade suitable for yogurt.
For cooking sliced goose can take a different marinade. We describe the recipe based on kefir. We will need:
Pour kefir into the container, pour in spices. Onion cut into half rings, add. Mix kefir with other ingredients. Then we coat the mixture with pieces of goose. You can marinate directly in a container with kefir, if all the meat in it is placed. If it doesn’t fit, we wrap each piece separately. Then we wrap it with a film and remove it for 5-6 hours in the cold. Before roasting, we cut pieces of goose from the marinade.

Marinade on sauerkraut with cranberries
For the marinade any acidic products are great. Previously, often took just what was at hand. And the sauerkraut with berries in the old days was in any hut. Therefore, this marinade came out cheap and effective. You will need the following ingredients:
• pickled cabbage pickle – 1 l;
• cranberry – 1/2 cup;
• vegetable oil – 2 tbsp. l .;
We take a capacious container. Pour brine. We touch the cranberries, my, we press. Add to brine. Pour in the oil. Sprinkle spices. Stir. Cut the onion, add. Well we mix everything up. Put the whole goose right in the bowl with the brine for the night. Then take out and bake.
